INCI: Potassium Chloride
Potassium Chloride (KCl) is a white, odourless crystalline salt used as a sodium-free source of potassium. In formulation it is valued as a salt replacer for reduced-sodium foods, a potassium source in electrolyte and mineral blends, and a nutrient for brewing and feed applications.
Specification
- Chemical formula: KCl
- CAS No: 7447-40-7
- EC/EINECS: 231-211-8
- E number: E508
- Molecular weight: 74.55 g/mol
- Potassium content: approx. 52% by weight
- Appearance: white, free-flowing crystalline powder
- Solubility: approx. 34 g per 100 mL water at 20°C
- pH (5% solution): approx. 5.0–8.0
Formulation notes
- Has a salty taste with a slightly bitter or metallic edge at higher inclusion; it is commonly blended with sodium chloride and flavour maskers to balance this.
- Dissolves readily and is slightly endothermic on dissolving, so solutions cool as the powder goes in.
- Blends well with other mineral salts in dry mixes. For clear liquid stocks, make separate single-salt solutions and combine at final dilution.
Common uses
- Reduced-sodium food manufacture - partial replacement for sodium chloride in baked goods, sauces, soups, snacks and processed foods
- Electrolyte and sports drink powders - potassium source alongside sodium, magnesium and calcium salts
- Mineral and supplement blends - powder, capsule and tablet formulations
- Animal and equine feed supplements - potassium source in custom mineral mixes
- Home brewing and winemaking - brewing water mineral adjustment and yeast nutrient
Storage
Store in a cool, dry place in a sealed container. Potassium chloride can take up moisture from humid air and will cake if left open, so reseal the bag immediately after use.
