Mono Sodium Phosphate (MSP), also known as sodium dihydrogen phosphate or monobasic sodium phosphate, is a white crystalline powder used as an acidity regulator, buffering agent and sequestrant. It is listed as food additive E339(i).

Key aspects

Functionality: MSP lowers and holds pH, buffers acidic systems, sequesters metal ions that would otherwise cause discolouration or rancidity, and works as the acid component in leavening and effervescent systems. It is highly soluble in water and dissolves quickly at room temperature.

Safety standards: Certified food grade material complying with Food Chemicals Codex (FCC) requirements, with controlled limits on heavy metals including lead and arsenic. A Certificate of Analysis is available on request.

Applications

Bakery: acid component in baking powder and self-raising flour blends, paired with sodium bicarbonate for controlled leavening.

Meat and smallgoods: moisture retention, yield improvement and pH control in cured and brined products.

Dairy and beverages: pH buffering in evaporated and powdered milk, flavoured drinks and sports beverages.

Effervescent and supplement powders: the acid partner in effervescent tablet and powder formulations.

Brewing and winemaking: brewing water adjustment and mash pH correction.

Cleaning and industrial: buffering in detergent blends and boiler water treatment.

Typical specification

Appearance: white crystalline powder or granules. Assay (NaH₂PO₄): 98.0% min. pH (1% solution): 4.1 – 4.7. Solubility: freely soluble in water. CAS No. 7558-80-7 (anhydrous) / 10049-21-5 (monohydrate). E number: E339(i).

Storage

Store in the original sealed container in a cool, dry place away from direct sunlight. Hygroscopic — reseal after use.
