Thaumatin Sweetener

INCI: Thaumatin

Thaumatin is a nature-identical intense sweetener. It is a protein molecularly identical to the thaumatin found in the aril of the West African katemfe fruit (Thaumatococcus daniellii), but it is not extracted from the fruit.

It is NLT 2000 times sweeter than sucrose by weight, so inclusion rates are very low. The sweetness has a slow onset and a lingering finish. At sub-sweetening levels it works as a flavour modifier, masking bitterness and rounding off off-notes from actives, minerals and other high-intensity sweeteners.

Applications include beverages, supplements, chewing gum, confectionery, oral care and flavour systems. It is permitted as food additive E957 in many markets.
