Locust bean gum, also known as carob gum, is a natural hydrocolloid extracted from the seeds of the carob tree, primarily used as a thickener and stabilizer in various industries due to its excellent water-binding capacity and ability to form gels, particularly when combined with other hydrocolloids; its key properties include high viscosity, clarity, and the ability to create smooth textures, making it valuable in food products like ice cream, yogurt, sauces, and processed meats, as well as in cosmetics and pharmaceuticals. 

Locust bean gum is considered a dietary fiber suitable as a supplement for weight control and for the treatment of diabetes and hyperlipidemia. As a viscous soluble fiber, it slows down the degradation of carbohydrates during digestion to regulate blood glucose and insulin levels. 

Common uses of locust bean gum:
  • Food industry: Thickening agent in ice cream, yogurt, sauces, salad dressings, processed meats, and baked goods.  Stabilizer in dairy products and beverages Improves texture and mouthfeel in processed foods
